Spent half an hour to confirm but I saw all four moods of Sofi! It does take quite a while to change but given her personality I think it makes sense.

Fair enough, I'm not familiar with how the game's coded, nor with how the mood changes are triggered, so can't really suggest any shortcuts or anything, but thanks for answering anyways.
